This full bodied wine displays aromas of blackberry and black pepper supported by spicy, dark fruits on the palate with subtle integrated oak. The extensive finish is framed by elegant, fine grained tannins.  

The hand-picked grapes were destemmed, but not crushed, and spent seven days on skins in an open fermenter with twice daily hand-plunging and gentle pump-overs of the cap to extract colour, flavours and tannins. This was followed by careful basket pressing and maturation in a combination of American and French oak barrels for twenty two months prior to bottling. In keeping with our non-interventionist winemaking style we have neither fined nor filtered this wine and as a result decanting is recommended. 

3 Passo, meaning 3 Steps in Italian because the wine is produced following these 3 steps. 1. Partial Appassimento (Grape Drying) to get a more concentrated fruitness. 2. Over pumping of the must in a tank at cold temperature to extract sweet tannins and dark colour. 3. Ageing in oak to enhance smoothness and longevity.

A delicious Italian red! it has notes of dried fruit and is a little herby.. very tasty!

Fantastic mix of classic grapes from the Lazio region. Each grape manages to bring their peculiar characteristic to this wine. The Nero Buono grape brings spicy notes while the Montepulciano grape transfers colour and a hint of fruit flavour, leaving the Cesanese grape to add the lean profile to it

A lively ruby red wine, with a delicate, intense, ethereal and pleasant aroma. It's characteristics make it excellent for all dishes, but unbeatable with red meat, game and medium mature cheeses.
